Family comfort of the most expensive restaurant in Palanga

I hope that the first part of the review of the restaurants of the off-season Palanga I surprised you a little. After all, there is an additional sense to come here not in the summer, when there are crowds of tourists around and every establishment cannot give you much attention. Today we will visit the family restaurant of the well-known Lithuanian sports family Sabonis, and in another institution we will try casserole, which has been very popular among spa guests for 22 years.

“In the shade of the pines” – it sounds like the almost indiscriminate phrase “push paunksne” in Russian. This is the name of the hotel and restaurant of the famous Lithuanian sports family – Arvydas and Ingrida Sabonis. I was lucky not just to have lunch at this restaurant, but to spend a few hours talking with the owner of this place. The first steps on the inside, the second floor, a non-standard layout for the restaurant, a lot of flowers on the windowsills. At first, thoughts are confused.
The first words of Ingrida put everything in its place: “The restaurant is my home.” Now it’s clear that you immediately begin to treat this place not as an institution, but as someone else’s house where they are glad to see you. Hence the diversity of the menu – a good housewife, a mother of four children, an active traveler with a lot of experience moving around the globe can and should be able to cook mashed potatoes and snow crab. Why do I say cook? The fact is that Ingrida, despite the staff of cooks and service personnel, is still constantly in the kitchen. “I take such a place to see all the dishes that go into the guest lounge,” she says. The owner of the restaurant does not shy away and cook herself something for the guests, especially if something was suddenly not on the menu.
The main philosophy of the dishes is clarity. “If a person gets some kind of“ masterpiece ”on a plate, then he is frightened, he doesn’t know how to approach him. I always like people to understand that there’s a plate in front of them so that they don’t have to rotate with an incomprehensible look” – laughs Ingrida.
The restaurant menu lives with the owner. First, the focus was on Lithuanian cuisine. Could not but get into the menu favorite dishes of children Sabonis. Active trips around the world – America, Spain – also leave their mark. Particularly vivid are the culinary memories from Andalusia. “If I don’t make my own dish, I’m making authentic classics and will seek one-to-one correspondence with the original. I don’t like fakes. If we have onion French soup, then this is a recipe from the 18th century,” says Ingrida , recalling the canonical Caesar salad, which has been on the menu for a dozen years. Now the restaurant owner wants to open a small sushi bar on the terrace and put a real Austrian “Sacher” on the menu.
Ingrid jokes that if it were not for the high cost of printing a new menu with photos, it would change more often. Arvydas Sabonis, by the way, is the biggest critic of everything new on the menu. He first tries new dishes and recommends his wife how to improve them. So far, there has not been a single dish that the famous basketball player rejected. The very process of discussion, according to Ingrida, is not always quiet and sometimes with heated discussion.
At the end of the season, a printout of the box office’s computer gives the restaurant’s “rating of dishes” In the first place over the summer of the outgoing year – dorado carpaccio. In this dish, two different cuisines came together surprisingly. Soy sauce refers us to Japanese cuisine, and thin fried crispy slices of garlic talk about the “Spanish wind” in serving dishes. Carpaccio itself is an Italian dish. All together – very unusual and tasty.
In appetizers, second place in popularity among guests goes to tuna tartare with garlic and almond sauce. In third place is the Caesar salad with chicken, which Ingrida, reluctantly, still removed from the menu. The fact is that every year three types of dishes are removed from the menu to make way for a new one. At the same time the guest, if he knows and tried some dish before, but does not see it in the menu, may ask the waiter to cook it. I am sure that such a request will not be ignored.
The restaurant menu is impressive in the number of positions. Residents of the hotel or just guests of the resort who will come here more than once will like it – you can choose completely different dishes. There is almost everything here – from chicken Kiev with mashed potatoes to paella.
It is believed that “In the Shadow of Pines” is one of the most expensive restaurants in Palanga, which has been operating for 18 years. The prices on the menu seemed to me not shocking, but just above the average at the resort. For example, Caesar salad, carpaccio of gilthead and Ingrida-recommended beef stroganoff will cost 36 euros. The most expensive items are grilled lobsters and a snow crab snack – each dish is about 50 euros. Hot meals cost from 15 to 50 euros per person. At the same time portions, it should be understood, will be rather big.
From the experience of life in Madrid, dairy piglets migrated on the menu for a company of 8-10 people. This dish will cost the company 350 euros.
